How To Clean Shiitake Mushrooms

The stems of shiitake mushrooms are usually too tough to eat, so you should remove and discard them, and use only the mushroom tops.

Lightly dampen a paper towel under cold running water.

Holding a shiitake mushroom in one hand (you can hold it by the stem) and the damp paper towel in your other hand, gently wipe the top of the shiitake with the paper towel.  This will remove the dirt from the top of the mushroom.

Remove the stem from the shiitake: Gently hold the top of the mushroom with one hand.  With your other hand, gently pull and twist the stem until you've removed it.  (You can discard the stem.)

Alternatively, you can cut off the stem with a small, sharp knife, cutting just below the mushroom cap so you remove the whole stem. (Discard the stem.)

If the underside of the mushroom cap is dirty, carefully scrape around it with a small knife to remove any pieces of dirt.

Repeat with any remaining shiitake mushrooms.
